What is Gluten?

Gluten is the protein component of wheat, rye, barley, and other grass-related grains. It's what makes pizza dough stretchy, bread chewy, and gives baked goods their texture.

What is Celiac Disease?

Celiac disease is an auto-immune disease that makes it harmful for people to digest gluten. As many as 1 in 150 Americans may have this disease. Other disorders, such as Autism and AD/HD, may also be linked to wheat consumption and to Celiac.  People with wheat allergy or intolerance also benefit from removing gluten from their diet.
